
Coconut Cream Pie?
I am looking for a good recipe, tried and true cream pie, coconut. No pineapple, bananas, nuts or other additional flavors, please. Many thanks!
I love coconut cream pie and have tried many recipes for it - these are some of my favorites: Coconut Cream Pie METHOD Chill PREP 10 min. COOK 10 min. Total 20 min. INGREDIENTS 2 / 3 cup sugar 1 / 4 cup cornstarch 2 tablespoons flour 1 / 4 teaspoon salt 3 cups milk 3 egg yolks, beaten 1 tablespoon butter or margarine 2 teaspoons vanilla extract 1 cup flaked coconut, divided 2 cups whipping cream or whipping cream 1 pastry shell (9 inches), Directions get baked in a pan, combine sugar, cornstarch, flour and salt, gradually add milk until smooth. Bring to a boil over medium heat. Cook and stir for 2 minutes or until thickened. Remove from heat. Gradually pour a small amount into egg yolks, return all to saucepan, stirring constantly. Lead to a gentle boil and cook and stir for 2 minutes. Remove form heat and stir in butter and vanilla. Cool to lukewarm times 2 / 3 cup coconut. Pour into shell pastry. Refrigerate until firm, about 3 hours. Meanwhile, toast the remaining coconut. To serve, top with whipped cream and sprinkle with toasted coconut. Save in the refrigerator. Yield: 6-8 servings. ******* ******************************************* ******************* COCONUT CREAM PIE 1 cup sugar 1 / 2 cup cornstarch 1 / 4 tsp. salt 3 cups hot milk 3 egg yolks 1 tsp. vanilla extract 2 cups coconut 1 cup heavy cream 1 baked pie shell Combine sugar, cornstarch and salt. Gradually add the milk in a medium saucepan. Stir until smooth and cook well. Make Boil 2 minutes. Remove from heat. Add half of hot mixture into yolks, then combine with rest in pan. Cook, stirring, over low heat until it boils and is sufficiently mound thick for the spoon (5 minutes). Turn the bowl. Add half the coconut and extract. Place waxed paper directly on filling. Refrigerate one hour, turn cortex. Refrigerate 3 hours. Whip cream and spread over filling. Top with remaining coconut.
